Not only is falafel dirt cheap (or at least it should be!), but it’s also naturally vegan and on top of that, it can be made a million and one different ways. From the classic version of ground chickpea paste with spices, fried to crispy perfection, now these little balls are going through a revolution to be made from not only chickpeas but with other ingredients like beetroot, spinach, carrot. The options are endless.
Nowadays, these little balls aren’t tied down to a pita pocket or Saj wrap either, as chefs worldwide are making them into burgers, salads, and even pizza! In addition to their new forms, their baked and grilled versions are attracting health nuts that normally stay away from deep-fried food.
